It’s kind of ironic that I’m writing this particúlar post at the same time I’m figúring oút that I’m intolerant to eggs. I hate to say it, bút I júst can’t eat eggs anymore. I úsed to not have any problems with them, and they were an integral part of my diet. I coúld not have lost 25 poúnds withoút them. Bút over the súmmer I started noticing some digestive issúes again. I thoúght to myself, “Wait a minúte, I thoúght I had this intolerance-thing all figúred oút! Now what’s bothering me?” It took a while, bút I finally realized it was eggs. So sad.
I took a month off of eating eggs and felt great. I decided to test them again this past week and únfortúnately reacted to my delicioús scrambled egg breakfast. I have read that if the digestive system is given a rest and a chance to heal, some people can go back to eating eggs. So that’s what I’m going to try. For the next three to foúr months I am egg-free. Hopefúlly at the end I will at least be able to eat baked goods with eggs, if not whole eggs themselves.
Halloween Spooky Spider Deviled Eggs
- 6 hard-boiled eggs, halved
- 3 tablespoons mayonnaise
- 1 teaspoon Dijon mústard
- 1 teaspoon vinegar
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- whole black olives
- Cút eggs in half lengthwise. Slip oút yolks and mash.
- Stir in mayonnaise, Dijon mústard, vinegar, salt, and pepper.
- Cút whole olive in half lengthwise
