I went from the wife and mother who used to love to create an award-winning meal to a wife and mother who has exactly 27 minutes to prepare a meal that no one will complain about before we go to our next activity.
Cooking and meal preparation has changed in our house.
I have less time. More vocal eaters. And a desire to still create something that is healthy from scratch.
For some reason, Mexican is always a hit in our house. Maybe it is the smothering of sour cream and salsa or maybe it is the addition of tortilla chips….all I know is that when I’m crunched for time this is my healthy chicken burrito recipe.

20 Minute Healthy Chicken Burrito Recipe
Primary Ingredients
- 3 large flour tortillas
- 1 lb boneless skinless chicken breast, chopped into bite size pieces
- 3/4 cups black beans, drained and rinsed (a little less than a whole can)
- 1/2 medium yellow onion, chopped
- 1 teaspoon chili powder
- 1 teaspoon cumin
- cooking spray
- 6 tablespoons Mexican cheese blend, shredded
- 3 tablespoons salsa, plus more for garnish
- 3 tablespoons sour cream, plus more for garnish
